My Favorite Recipe:
I wish I could take credit for this one but hubby is the one who created it and this meal has become a quick and easy fix in our house. It's Cheeze-it pork chops. Simply crush some cheeze-its into crumbs. Dip your chops in some melted butter and coat with the crumbs and bake. We really like the hot and spicy ones but we have used the plain. This method also works good with chicken too. I have alot of other recipes, about 300 printed however, they are in a very large binder that I have yet to three hole punch them into. (I was hoping to get them sorted and into the binder properly over Christmas) I used to love Recipezaar I could search by rating or ingredient but they were bought out by Cooks.com and now I am not a big fan of their website. I am hoping to do some OAMC this weekend since I am off Monday so I will be checking other links for some new ideas....

Biggest Challenge for 2011





The year ended on a great note. I had the week off and managed to get both of the spare bedrooms in order just in case we got company. We didn't, thankfully but getting organized was a really good feeling. I kinda felt bad for taking baby to the sitter for two days to get stuff done rather than have him at home with me but I knew that I wouldn't get #### done if I had to chase him around all day. I had big plans for the week, most of the things I wanted to do I did. I got my pantry and kitchen clean and rather than have to go shopping I found a bunch of food at the bottom and the very back of the 8 ft lazy susan with a flashlight that "somebody" had gotten ahold of and threw back in there...so I didn't have to buy as much as I thought. I did get the cabinets to build my bench seating in my dining area and I did get the buffet cleaned out and organized thanks to the 7 gorgeous envelope boxes that someone threw out at work-it made packing up all the odds and ends in it a breeze-now if I just had someplace to put the buffet hubby could start building my bench... My MAIN goals for this year are pretty basic and they aren't in any particular order I
1) keep my house organized. After spending so much time carefully finding a place for things, I want to keep it that way. I am the worst for not putting things back in the same place twice.
2) plan more freezer meals and cook more in bulk. I cook alot usually on the weekends. I always have something in the crockpot on Sat either chicken or some kind of beans that we can eat. I would like to have more that we can "heat and eat" since most days I don't get home until 6pm. I'd like to spend more time with my little guy in the evenings rather than cooking.
3) I am still on the fence whether or not to go back to school and get my Ph.D. I work in the department where I want to take classes, Let's just say its complicated but do-able if I get the support I need from my employer.
4) gain some weight. This one is the opposite of most people. I am not a big person I am under 5 ft tall and I weigh about 100 pds. I am pretty tiny, I would like to have a little more meat on my bones than I have. I guess I need to eat more of what I cook.
5) spend more time with my little guy. A few hours every night and the weekends doesn't seem like enough. He's growing so fast...
